HISTORY

The Caipiroska is the Caipirinha with vodka, and it belongs to the 1970s, when vodka spread through Brazilian bars as a neutral alternative to cachaça. The build is unchanged — lime wedges muddled with sugar, spirit, crushed ice — so what the drink loses in cachaça’s grassy edge it gains in clarity. In Brazil it is often the drink a bar makes for someone who finds cachaça too assertive, which is both its purpose and its reputation.
