HISTORY

The Bee’s Knees was a Prohibition-era way to make rough gin palatable, using honey and lemon to mask the spirit’s harshness. The name is 1920s slang for something excellent. It disappeared for decades and returned with the craft cocktail movement, when bartenders began using good honey syrup and fresh citrus.
