HISTORY

The Kir Royale is the champagne version of the Kir, a Burgundy aperitif of white wine and crème de cassis. It is named for Félix Kir, the mayor of Dijon who popularised the mixture after the Second World War. The cassis gives the drink a deep ruby colour and a tart berry edge.
