Passion Fruit Martini

Vanilla vodka, passion fruit and lime, served with half a passion fruit and a shot of Prosecco alongside.
Douglas Ankrah created the drink at the Townhouse in London in 2002, and took it with him to LAB; it is now one of the most ordered cocktails in the United Kingdom. Vanilla vodka, passion fruit liqueur and fresh passion fruit purée do the work, lime keeps it from cloying, and the small glass of Prosecco served on the side is part of the original spec rather than a garnish. Menus list it under both names, and the anodyne one is winning.

Ingredients
- Vanilla vodka40 ml
- Passion fruit liqueur15 ml
- Passion fruit purée20 ml
- Lime juice15 ml
- Vanilla syrup10 ml
- Half a passion fruitto garnish

Method
Shake the liquids with ice, fine-strain into a chilled coupe, garnish with half a passion fruit and serve the Prosecco alongside.
