What inspired you to become a bartender:

Started in Italy, in the club where I worked. I was so fascinated by the brilliant skills of my “mentor” at the time. That’s how it started, throwing bottles into the air.

Tell me about your bartending journey and how you got to where you are now:

After years of training in Italy (mainly Speed and Flair), I landed in London where I learned the true meaning of “bartender”, I started out as a barback climbing my climb, studying and reading every day.

What stamp would you like to leave on the industry:

I rather think “What stamp would the industry leaves on me”

Can you explain your personal process for creating a cocktail:

Very unusual: Following the classic ratio recipes, I get inspired by colours and how they can be related together.

What is the most important part of what you do and what does it mean to you:

Discipline and passion: “do what you love, love what you do”

What do you think will be the future of the F&B industry:

Hard times ahead, social distance will create barriers. Giving a big chance to the internet to take it over. Cocktail deliveries I believe will be a thing (covid-19).

Anything that would you like to add?

Most bizarre client request:

Cranberry and tomato juice.
