The primary association with cucumbers is always linked to their inherent freshness, although a subtle bitterness resides in the seeds and skin, offering an opportunity to add depth to their flavor profile. Crafting cucumber syrup mirrors the process of making an oleo saccharum: weigh the cucumbers or utilize leftover pieces, cut them into slices, or leave them whole, then combine with sugar and let the mixture rest in a plastic container or vacuum bag overnight.

During this time, the sugar will draw out the water from the cucumbers, retaining all the essential vitamins and minerals. Afterward, strain the mixture using a chinois and bottle the resulting cucumber syrup for use in various culinary applications.
